The melukhia is a plant that is dried and then reduced to powder to mix with oil, then meat or tripe, and spices.
Simmer about 3 to 4 hours with olive oil, bay leaves.. Use of beef, and any meat that take much longer to cook this dish. When mloukhia is well cooked, the texture of the dish liquid, but not too much, the supernatant oil and almost black.
The melukhia sold by Oriental Souk comes directly from Tunisia, where the spice is ground and prepared the traditional way, by hand.
